Broccoli Casserole With Ritz Crackers
Description
The Broccoli Casserole With Ritz Crackers features frozen broccoli that is briefly boiled to tenderize before being mixed with Velveeta cheese cubes and seasonings including garlic powder, onion powder, salt, and black pepper. Once the cheese melts into a creamy mixture, it is poured into a prepared baking dish and topped with shredded sharp cheddar cheese. A crunchy layer of crushed Ritz crackers combined with melted butter is spread on top for texture and added flavor. Baking at 350 degrees until bubbly completes the dish.
The blend of creamy cheeses and tender broccoli is accented by a golden, buttery cracker topping that contrasts in texture. This casserole can serve as a side dish at dinner or a comforting main for vegetarian meals.
The recipe notes that leftovers store well in the refrigerator for up to five days or can be frozen for three months. Reheating in an air fryer refreshes the crispy topping while heating the casserole through, preserving its texture and flavors.
Ingredients
- 32 ounces broccoli floret frozen
- 1/2 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon onion powder
- 16 oz Velveeta cheese cut into small cubes no larger than 1" in size
- 1 cup cheddar cheese grated, sharp
- 1 ritz cracker crushed, sleeve
- 2 tablespoons butter melted, salted
Instructions
- Preheat the oven to 350 degrees. Prepare a 9X13 baking dish by spraying the bottom and sides with non-stick spray. Set aside.
- Boil the broccoli florets in salted water for 3 minutes, drain them, and put them into a large mixing bowl.
- Season the broccoli with salt, pepper, garlic and onion powder. Stir the Velveeta Cheese into the broccoli until fully incorporated and all the cheese is melted.
- Pour the broccoli cheese mixture into the casserole dish and distribute evenly. Sprinkle the shredded cheddar evenly on top of the broccoli.
- Mix the crushed ritz crackers with the melted butter then sprinkle on the top of the casserole. Bake for 25-30 minutes until the cheeses are bubbly. Remove from oven and serve immediately.
Notes
- Store leftovers in the refrigerator for up to 5 days or freeze for up to 3 months.
- Reheat in the oven or use an air fryer at 350°F for 5-7 minutes to restore the crispy cracker topping.
