  • 28 ounces broccoli frozen, chopped
  • 8 ounces processed cheese Velveeta Original Loaf
  • 1 leeve Ritz crackers crushed
  • ½ tick butter divided
  • 2 tablespoons water

Instructions

  1. Preheat oven to 350 degrees. 
  2. Cook broccoli according to package instructions, remove any and all water, and set aside.
  3. While broccoli cooks; in medium saucepan melt ¼ stick butter with the block of Velveeta cheese until smooth. Then, add broccoli and mix well. Place the broccoli mixture into a lightly oiled casserole dish.
  4. In small bowl (using the microwave), melt ¼ stick butter, add water, and mix into cracker crumbs with fork. Sprinkle cracker crumb mixture over the broccoli and cheese. 
  5. Bake at 350 degrees for about 20 minutes or until crumbs are golden brown.

Notes

  • You can substitute fresh broccoli by blanching it 2 minutes and cooling immediately to maintain texture before using.
  • Velveeta cheese is essential for this casserole’s creamy texture; results may vary with other cheeses.
  • Use one sleeve of buttery Ritz crackers for a balanced crumb topping—don't skimp.
