  • 1/3 cup flour
  • 1/3 cup Parmesan Cheese , grated
  • 2 egg lightly beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper ground
  • 1 pound broccoli chopped and blotted dry with a paper towel, steamed florets
  • 3 tablespoons scallions , thinly sliced (optional)
  • 2 tablespoons vegetable oil or canola oil
  • sea salt for seasoning, Maldon

Instructions

  1. In a large mixing bowl or stand mixer fitted with a paddle attachment, combine the flour, Parmesan cheese, egg, garlic powder, onion powder and black pepper. Mix until just combined.
  2. Add the broccoli and scallions, fold in by hand until just combined. Set in the refrigerator until skillet is ready.
  3. Heat the oil in a large skillet over medium-high heat.
  4. Using a tablespoon, place the batter into frying pan and allow to spread and flatten. Brown on each side, approximately 1-2 minutes each.
  5. Remove and drain on a wire rack over a paper towel lined plate.
  6. Sprinkle with Maldon sea salt.
