  • 2 pound (1000 grams) broccoli cut into small florets, 4 heads
  • 1/4 cup butter unsalted
  • 3 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1 1/2 teaspoons salt
  • 1 pinch nutmeg
  • 1/2 teaspoon black pepper ground
  • 1 cup cheddar cheese grated sharp
  • 1/2 cup bread crumbs

Instructions

  1. Bring water to a boil in a saucepan. Add the broccoli florets and blanch for 2 minutes. Transfer the broccoli to a bowl filled with cold water and let it sit for 10 minutes, or until completely cooled. Drain and set aside.
  2. Preheat the oven to 450°F (230°C). In a saucepan, melt half of the butter over medium heat. Whisk in the all-purpose flour, then stir in the milk. Season with salt, nutmeg, and ground black pepper. Stir constantly for 1 to 2 minutes, until the ingredients are fully combined. Turn off the heat.
  3. In a butter-greased baking dish, arrange the broccoli florets in a single layer. Evenly sprinkle the grated sharp cheddar on top, then pour the milk mixture over the broccoli.
  4. Melt the remaining half of the butter in a skillet over medium heat. Add the breadcrumbs and cook, stirring frequently, for 2 minutes, or until the breadcrumbs are golden brown. Turn off the heat and sprinkle the toasted breadcrumbs over the gratin.
  5. Bake the broccoli gratin for 20 minutes, or until it is golden brown and bubbly. Serve immediately.

Notes

  • This recipe works well with either fresh or frozen broccoli.
  • Blanching or steaming the broccoli florets before baking them with other ingredients helps to shorten the cooking time. 
  • Do not overcook the broccoli florets. The broccoli should remain slightly crisp as it will continue to cook in the oven. Blanch the broccoli florets in boiling water for 2-3 minutes or steam for 3-4 minutes for the best result. 
  • If you're adding cheese to your gratin, choose a good-quality cheese and grate it yourself. Sharp cheddar, Gruyère, or Parmesan work well for added flavor.
