These ham and cheese egg muffins with broccoli are ready in 20 minutes and so simple to make! With just a few ingredients, you can have breakfast for everyone and even have extra to save for meal prep.

Ingredients
- 6 egg large
- ¾ cup egg white
- salt to taste
- ground black pepper to taste
- 3/4 cup ham about 6 ounces, fully cooked, diced
- 3/4 cup broccoli florets fresh or frozen, small, chopped
- 1 red bell pepper finely diced (about 3/4 cup)
- 3/4 cup cheddar cheese shredded sharp
Instructions
- Preheat oven to 400˚F.
- Whisk together the eggs and egg whites. Mix in ham, broccoli florets, and red pepper.
- Use a small ladle or measuring cup to fill each cup of a greased 12 count muffin tin about 3/4 full. Top each muffin with the cheddar cheese.
- Bake for 10-12 minutes, or until the egg cups are cooked completely through and spring back when touched.
- Serve warm. Enjoy!
Notes
- Tip: Make sure to dice the red pepper, and broccoli florets into very small pieces so that they are able to cook through in the same time frame as the eggs. Larger cuts may stay more crunchy.
