Broccoli Pasta Salad
Description
This salad starts by cooking rotini pasta and rinsing it under cold water to stop cooking and keep it firm. Small pieces of broccoli florets are combined with finely diced red onions, dried cranberries for sweetness, crunchy sunflower seeds, and crumbled cooked bacon for savory texture. Feta cheese adds a mild tang if included.
The dressing is a blend of mayonnaise and sour cream with white wine vinegar for acidity, balanced by a pinch of sugar, salt, and black pepper. This creamy, slightly tangy dressing coats the salad ingredients uniformly.
Once tossed together, the salad chills for an hour allowing flavors to meld. It offers a mix of textures from crisp broccoli and onions, chewy cranberries, crunchy seeds, and creamy dressing complemented by salty bacon. This broccoli pasta salad is refreshing as a side or light meal especially in warmer weather.
