Broccoli Pizza Crust

The Broccoli Pizza Crust uses finely pulsed steamed broccoli, combined with eggs, mozzarella, Parmesan, and seasonings, creating a low-carb, vegetable-based alternative to traditional pizza dough. The crust bakes to a golden edge with a tender interior, providing a flavorful base for toppings like mushroom, tomato, basil, and pizza sauce. This recipe allows for a nutritious way to enjoy pizza while incorporating more vegetables.

Description

Broccoli Pizza Crust transforms grated, steamed broccoli into a dough-like blend with eggs, mozzarella, Parmesan cheese, and Italian herbs. After squeezing out excess moisture, the mixture forms a crust that crisps up in the oven, offering a unique texture compared to wheat crusts. The recipe includes topping with pizza sauce and choices like mushrooms, tomato slices, and fresh basil, giving a vegetable-forward yet familiar pizza experience.

The crust's flavor melds mild broccoli with melted cheeses and seasoning, balanced by the savory undertones of garlic powder and Italian seasoning. Baking at a high temperature ensures a firm crust that holds toppings well. The method involves shaping the dough on parchment paper and pre-baking before adding sauce and toppings.

This pizza crust suits those seeking to incorporate vegetables into their meal or reduce carbs. Toppings can be varied based on preference. Serve it as a pizza for lunch or dinner with a side salad for a complete meal.

Leftover crust or prepared pizzas should be stored in airtight containers and kept refrigerated for up to 3-4 days. The crust can be made ahead and frozen for up to three months, then baked before adding toppings. Seasonings and toppings are flexible, allowing customization.

Ingredients

Servings
  • 1 broccoli cut into florets, large head
  • 2 egg
  • 2 cups mozzarella cheese divided
  • ¼ cup Parmesan Cheese
  • ½ teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup pizza sauce
  • mushroom for topping
  • tomato
  • basil

Instructions

  1. Preheat oven to 425°F. Line a round 14" pan with parchment paper; set aside.
  2. Place the broccoli florets in a bowl of a food processor. Pulse until the broccoli is grated and looks like rice or couscous, being careful not to over-pulse.
  3. Transfer to a microwave-safe bowl, and cook for 2 minutes, or until softened. Place the steamed broccoli on an open cheese cloth or dish towel and allow it to cool. When it’s cool to the touch, wrap the broccoli in the towel and squeeze out all the excess water so it is as dry as possible.
  4. Transfer the broccoli to a large bowl, add the eggs, 1 cup mozzarella cheese, Parmesan cheese, Italian seasoning, garlic powder, salt and pepper. Mix with a spoon or your hands until all the ingredients are well blended and a dough forms.
  5. Place the dough on the prepared baking sheet, and shape into a round pizza crust, about 1/2 inch thick.
  6. Bake the dough in the preheated oven for 10-12 minutes until golden. Remove from the oven and add the pizza sauce, remaining mozzarella cheese and any other toppings.
  7. Return to the oven and bake until the cheese is melted and the crust is crisp, about 10 more minutes.
  8. Cool for a few minutes before cutting and serving.
