Broccoli Rice Casserole

Hearty, healthy, and delicious, this cheesy broccoli rice casserole is easy to make and great to serve a crowd! A great potluck recipe.

Ingredients

  • 1/2 cup butter
  • 1 onion chopped, small
  • 1 1/2 teaspoons parsley dried
  • 1/4 teaspoon thyme ground
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper or to taste, ground
  • ½ teaspoon garlic powder
  • 12 ounces broccoli chopped, steamed florets
  • 10.75 ounces condensed cheddar cheese soup (1 can)
  • cup heavy cream
  • 2 cups brown rice cooked
  • 2 cups cheddar cheese shredded, divided, sharp

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Spray a 9x13 baking pan (or 2 quart baking dish) with cooking spray.
  2. Melt butter over medium high heat in a large pan. Add onions and saute until softened, about 3-4 minutes.
  3. Add in seasonings and broccoli, cook an additional minute before adding in remaining ingredients except for 1 cup of shredded cheese. Cook 2 minutes.
  4. Pour rice mixture into the prepared pan. Top with remaining cheese.
  5. Bake for 20-25 minutes, or until cheese melts and is bubbly.
