Broccoli Salad
Description
Broccoli Salad offers a combination of crisp broccoli pieces coated lightly in a sweet and tangy dressing made from mayonnaise, sugar, and white wine vinegar. The addition of dried cranberries introduces chewy sweetness alongside the mildly nutty sunflower seeds, which contribute texture. Bacon cooked and crumbled adds savory, smoky notes contrasting the sweetness of the dressing and fruit. The salad is prepared by mixing the broccoli and cranberries into the dressing, then chilling for at least two hours to meld flavors and allow the broccoli to soften slightly.
Sunflower seeds and bacon are folded in only before serving to maintain their crunch and prevent sogginess. This salad is well suited as a side dish with barbecues, picnics, or casual lunches. It can be customized by adding other vegetables or cubes of cheddar cheese for variety.
The salad can be made a day ahead without losing crispness by holding out the bacon and sunflower seeds until serving. It keeps well refrigerated for several days when stored properly.
Ingredients
- 1 cup mayonnaise
- 3 tablespoons sugar
- 2 tablespoons white wine vinegar
- 7 cups broccoli chopped florets
- ½ cup craisins
- ½ cup sunflower seeds raw or roasted, shelled
- 8 lices Bacon cooked and crumbled
Instructions
- In a large bowl, combine mayonnaise, sugar, and vinegar and mix well.
- Add broccoli and Craisins and stir to coat.
- Cover and chill in the refrigerator for at least 2 hours or up to 24 hours.
- Before serving, stir in sunflower seeds and bacon.
Notes
- Prepare the salad up to a day ahead but add bacon and sunflower seeds just before serving to keep them crisp.
- For longer storage up to 2-3 days, hold dressing separately and combine when ready to serve.

- Store leftovers in an airtight container in the refrigerator for 3-4 days.
