Broccoli Slaw
Description
Broccoli Slaw features a mix of broccoli slaw blend, green onions, sliced almonds, roasted sunflower seeds, and dried cranberries to create a textured, colorful salad. The crunchy elements contribute nutty and fruity notes that complement the fresh broccoli base.
The coleslaw dressing combines mayonnaise with lemon juice (or apple cider vinegar), pure maple syrup, Dijon mustard, and dried parsley, seasoned with salt and black pepper. Stirring the dressing ingredients creates a creamy and tangy sauce that coats the slaw ingredients evenly when tossed together.
This dish serves well alongside main entrees, especially during warmer weather, offering a refreshing alternative to heavier sides. The slaw can be stored for up to three days in the refrigerator when kept in an airtight container.
For a lighter version, substituting mayonnaise for plain Greek yogurt is suggested. Using an avocado oil mayonnaise can reduce saturated fat while maintaining creaminess.
Ingredients
- 1 (12-oz) package broccoli slaw mix
- 1 bunch green onion chopped
- ½ cup almonds sliced
- ½ cup sunflower seeds roasted
- ⅔ cup dried cranberries
Coleslaw Dressing:
- ⅓ cup mayonnaise
- 4 Tbsp lemon juice or apple cider vinegar
- 1 Tbsp pure maple syrup
- 1 tsp Dijon mustard to taste
- 1 tsp parsley dried
- ½ tsp salt to taste, sea salt
- ¼ tsp black pepper to taste
Instructions
- In a small bowl, mix together the coleslaw dressing ingredients until they are well combined and creamy. It’s okay if the dressing looks a bit runny.
- Open the package of broccoli slaw mix and pour it into a large bowl. Add in the chopped green onions, almonds, sunflower seeds, and dried cranberries (all of the slaw ingredients).
- Pour all of the coleslaw dressing into the bowl with the veggies. Toss everything together until the ingredients are coated with tangy dressing.
- Taste the cole slaw for flavor and add more sea salt or black pepper to your personal taste. You can also add a drizzle of olive oil. If you find there isn’t enough dressing for your taste, feel free to make more!
- Serve creamy broccoli slaw alongside your main entree, and enjoy!
- Store leftover slaw in an airtight container in the refrigerator for up to 3 days.
- This simple broccoli slaw recipe is ideal for warm weather gatherings, when everyone is in the mood for coleslaws! It pairs magically with burgers, pulled pork, sandwiches, bbq chicken, ribs, and more!
Notes
- You can substitute plain Greek yogurt for mayonnaise to create a lower-fat, lighter coleslaw dressing.
- Using avocado oil mayonnaise is a good choice for a lighter dressing with healthy fats.
- Store leftover slaw in an airtight container in the refrigerator for up to 3 days.
- Adjust the seasoning by adding more salt, pepper, or a drizzle of olive oil to taste after tossing the salad.
