Broccoli Slaw
Description
This Broccoli Slaw is made from pre-packaged or homemade shredded broccoli stems mixed with crisp Granny Smith apple cut into fine matchsticks and coated with lemon juice to prevent browning. Dried cranberries add bursts of sweetness while sunflower seeds contribute nutty crunch. The dressing is a light blend of mayonnaise, white or apple cider vinegar, sugar, celery seed, salt, and black pepper, providing a tangy, mellow flavor that complements the vegetables and fruit without overpowering them. After mixing, the slaw is chilled for an hour to meld textures and flavors.
The texture is crisp and refreshing thanks to the combination of chewy dried cranberries and crunchy broccoli stems with a creamy dressing. The lemon juice helps the apples maintain their color and freshness. Additional sunflower seeds are sprinkled on top for garnish and extra crunch.
This slaw makes a good side for sandwiches, grilled meats, or as part of a light lunch. It can be prepared ahead and stored up to four days refrigerated, allowing flavors to develop further.
To prepare homemade broccoli slaw, finely chop broccoli florets and shred broccoli stems into thin matchsticks or grate. Variations may include shredded carrots or cabbage for more variety and color. Stir the salad before serving leftovers to redistribute dressing.
