  • 6 cups broccoli 32 oz bag pre-cut florets, florets
  • ½ cup cheddar cheese sharp
  • 1 red onion small
  • 2 cups apple Rockit, diced
  • ¾ cup Greek yogurt plain, non-fat
  • 2 tbsp mayonnaise light
  • ½ tsp salt
  • ½ tsp parsley dried

Instructions

  1. First chop the produce: If you’re broccoli isn’t already cut into florets, chop into bite size pieces. If you buy a pre-cut bag of broccoli, dice up any larger pieces. The smaller the better with this salad! Finely dice the red onion. Dice Rockit Apples.
  2. Then, add produce to a large mixing bowl along with cheddar cheese.
  3. For the dressing, in a smaller bowl combine greek yogurt, light mayo, salt, and parsley. Mix until combined.
  4. Add dressing to the large bowl and toss well until all broccoli florets are covered.
  5. Enjoy!

Notes

  • Store salad in an airtight container; it keeps for up to 5 days and does not get soggy because it lacks lettuce.
  • Cut broccoli florets by trimming at the stem to avoid small unwanted pieces.
