Broiled Burgers with Sauteed Onions and Cheese

The Broiled Burgers with Sauteed Onions and Cheese recipe delivers juicy beef patties seasoned with garlic, onion, smoked paprika, and black pepper, broiled to medium doneness. These patties are topped with smoky gouda cheese and savory sautéed onions, offering smoky and aromatic flavors with a tender, juicy texture. This burger is well suited for a straightforward homemade meal that highlights balanced seasoning and melted cheese.

Description

This recipe uses 85/15 ground beef seasoned evenly with kosher salt, black pepper, garlic and onion powders, plus smoked paprika to add depth. The meat is divided into four evenly sized patties and gently formed with a dimple in the center to maintain flatness during broiling. The burgers are broiled close to the heating element for about 3 minutes per side to reach medium doneness.

After broiling, the patties are topped with thinly sliced smoked gouda cheese and sautéed onions, melted briefly in the warm oven. The resulting burger features a tender, juicy interior with a smoky, savory crust and rich melted cheese mingled with sweet caramelized onions.

These burgers can be served straight from the broiler for a simple meal, ideal for anyone looking for a classic and flavorful homemade burger experience.

Leftover patties store well in the refrigerator for several days or can be frozen for months, with gentle reheating recommended to preserve texture. Substitutions for cheese include sharp or smoked cheddar. Using 85/15 beef fat content helps retain burger juiciness.

Ingredients

Servings
  • 1 pound ground beef 85/15; see notes below
  • 1 teaspoon kosher salt or ½ teaspoon of any other salt, including Morton kosher salt, Diamond Crystal brand
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ¼ cup onion sautéed
  • 4 ounces gouda cheese smoked, thinly sliced

Instructions

  1. Preheat the broiler on high and position an oven rack directly (3-4 inches) below the heating element.
  2. Sprinkle the Kosher salt, black pepper, garlic powder, onion powder, and smoked paprika on the meat. Work the spices gently and evenly into the meat.
  3. Divide the seasoned meat into four 4-ounce portions and gently shape them into patties, 3.5 inches in diameter and ½ inch thick.
  4. Arrange the patties in a 12-inch cast-iron skillet. Push down on the center of each patty to create a dimple. This will help the burgers stay flat as they cook.
  5. Broil the burgers to medium, about 3 minutes per side (see notes below).
  6. Turn the oven off, top each patty with sauteed onions and cheese, and return the pan to the still-warm oven for just a few seconds, until the cheese is melted. Serve immediately.

Notes

  • Use 85/15 ground beef to keep burgers juicy; leaner meat may produce dry results.
  • Alternative cheeses like extra-sharp or smoked cheddar work well if gouda is unavailable.
  • Handle the meat gently when mixing and shaping to avoid dense burgers.
  • Store leftovers in an airtight container refrigerated up to 3-4 days, reheating gently at half power in the microwave.
  • Freeze cooled leftovers up to 3 months; thaw overnight in the refrigerator before reheating.
