  • 1 lbs salmon skin on, or 4 fillets around 115 grams each
  • 1 tsp lime zest
  • 1 tsp olive oil
  • 1 small shallot finely chopped
  • 1 cup couscous small quick cooking, not Israeli Couscous
  • 1 1/2 cups vegetable broth or chicken broth
  • 2 tbsp cilantro chopped
  • 1/2 pint cherry tomato halved
  • 1/2 cucumber long English, sliced and cut into quarters
  • 1/2 large red bell pepper thinly sliced
  • 1/4 small red onion finely chopped
  • 1 drizzle red wine vinegar
  • 1 drizzle olive oil
  • 1/8 tsp oregano dried
  • 1/4 tsp salt fine sea salt
  • 1/4 tsp black pepper ground
