- 1 lbs salmon skin on, or 4 fillets around 115 grams each
- 1 tsp lime zest
- 1 tsp olive oil
- 1 small shallot finely chopped
- 1 cup couscous small quick cooking, not Israeli Couscous
- 1 1/2 cups vegetable broth or chicken broth
- 2 tbsp cilantro chopped
- 1/2 pint cherry tomato halved
- 1/2 cucumber long English, sliced and cut into quarters
- 1/2 large red bell pepper thinly sliced
- 1/4 small red onion finely chopped
- 1 drizzle red wine vinegar
- 1 drizzle olive oil
- 1/8 tsp oregano dried
- 1/4 tsp salt fine sea salt
- 1/4 tsp black pepper ground
