Broiled Tomatoes

Broiled Tomatoes highlights thick slices of ripe tomato topped with garlic-seasoned olive oil, Italian herbs, and a blend of shredded mozzarella and Parmesan cheeses. The tomatoes are broiled until the cheeses melt and brown slightly, creating a dish with soft, juicy tomato bases and a bubbly, flavorful cheese topping. This warm, lightly browned preparation brings out a comforting savoriness, suited for a simple side or light appetizer.

Description

The Broiled Tomatoes recipe begins by slicing large, ripe tomatoes thickly to maintain their structure through broiling. Olive oil infused with minced garlic and Italian seasoning is brushed on each slice for an herbaceous, aromatic base. Generous layers of mozzarella and Parmesan cheeses provide a rich, creamy topping that browns under high heat.

Broiling at 500°F for 2-3 minutes melts the cheeses and browns them just enough to develop a bubbly texture without compromising the firmness of the tomatoes. The tomatoes retain softness and juiciness, complemented by the creamy, slightly crispy cheese.

This dish pairs well as a warm accompaniment to grilled meats or as a filling vegetarian snack. The combination balances acidity and sweetness from the tomatoes with umami and richness from the cheeses and seasoning.

Using freshly shredded cheeses improves the melt quality, as pre-shredded varieties often contain anti-caking additives that affect smooth melting. Ripe tomatoes should be firm enough to hold their shape but ready for eating. Fresh herbs are better added after broiling to preserve their freshness.
