Brown Basmati Instant Pot Coconut Rice
Description
This recipe for Brown Basmati Instant Pot Coconut Rice uses two cups of rinsed brown basmati rice combined with lite coconut milk, water, and sea salt. The ingredients are mixed in the Instant Pot ensuring the rice grains are fully submerged to cook evenly. The pot is sealed, cooking at high pressure for 22 minutes plus time to come to pressure.
Allowing the pressure to release naturally for 10 minutes before manually releasing remaining pressure helps maintain the rice’s tender yet separate texture without being mushy. Fluffing the rice with a fork after cooking finishes the preparation, releasing excess steam and separating grains.
The coconut milk adds mild richness and sweet nutty notes without overpowering. This recipe is adaptable; for more coconut flavor, use full fat coconut milk instead of lite. Adding sautéed onions before cooking or finishing with fresh citrus juice complements the dish when desired.
Rinsing the rice reduces surface starch and avoids clumping, ensuring a light and fluffy final texture. This preparation works well as a side for curries, grilled meats, or vegetable dishes where a subtly fragrant rice is preferred.
Ingredients
- 2 cups brown basmati rice
- 1 ml can coconut milk lite
- 1 cup water
- ½ teaspoon salt sea salt
Instructions
- Add the rice to a strainer and rinse well using cool water.
- Place all the ingredients to your instant pot and give it a good mix. Make sure the rice is covered by the liquids to ensure even cooking. Then close the lid and make sure the release valve is set to the sealing position. Set to high pressure for 22 minutes. (It will take about 10 minutes to build pressuring before counting down.)
- Allow pressure to release naturally for 10 minutes, and then release any remaining pressure with the release valve.
- Fluff with a fork and enjoy!
Notes
- Rinsing the rice well before cooking removes excess starch and prevents clumping.
- Shake the can of coconut milk before opening to mix separated contents for even flavor.
- Lite coconut milk keeps the dish lighter, but full fat can be used for richer flavor.
- Make sure the rice is fully covered by the liquids in the Instant Pot to ensure even cooking.
- Optional: sauté finely chopped onions before cooking or add fresh lemon or lime juice after cooking for added flavor.
