  • 4 ½ ounces butter cut into cubes, cold unsalted
  • ½ teaspoon salt
  • 1 egg large
  • 2-3 tablespoons water cold

For the Filling

  • 6 tablespoons butter unsalted
  • 1 tablespoon sage finely chopped, plus 6-8 whole leaves for topping, fresh
  • 2 cups pumpkin canned or fresh, puree
  • 1 egg plus another large egg beaten for egg wash, large
  • 1 teaspoon kosher salt
