For the Crust

- 4 ½ ounces butter cut into cubes, cold unsalted
- ½ teaspoon salt
- 1 egg large
- 2-3 tablespoons water cold
For the Filling
- 6 tablespoons butter unsalted
- 1 tablespoon sage finely chopped, plus 6-8 whole leaves for topping, fresh
- 2 cups pumpkin canned or fresh, puree
- 1 egg plus another large egg beaten for egg wash, large
- 1 teaspoon kosher salt
