Description
The Brown Gravy Recipe mixes chicken broth, beef broth, and beef bouillon with onion and garlic powders and Worcestershire sauce for a layered savory base. Adding kitchen bouquet or similar browning sauces darkens the color and enriches taste. The gravy is thickened by whisking in cornstarch mixed with cold water during boiling.
After thickening, a short gentle simmer helps develop texture and flavor. Incorporating cold butter at the end produces a velvety finish. This method yields just over a cup of gravy with balanced seasoning and smooth consistency.
Optional flavor boosts include adding meat drippings if available, which may reduce the need for bouillon. Sautéed onions, shallots, or mushrooms can be cooked before adding liquids for aromatic complexity. Fresh herbs like rosemary, sage, or thyme can be infused at the end. A splash of dry red wine or a pinch of Dijon mustard also enhances depth, if desired.
Ingredients
- 1 cup chicken broth
- 1 cup beef broth
- 1 beef bouillon cube or 1 tsp better than bouillon
- 1 teaspoon onion powder
- ½ teaspoon garlic powder
- 1 ½ teaspoons Worcestershire sauce can sub soy sauce
- 2-3 drops kitchen bouquet sauce optional. Can also use Gravy Master.
- 1/4 cup water cold
- 3 tablespoons cornstarch
- 1 Tablespoon butter cold unsalted
Instructions
- Add the chicken broth, beef broth, beef bouillon, onion and garlic powder, and Worcestershire sauce to a medium saucepan. Stir to combine.
- Optional: If a darker color is desired, add 2-3 drops of Kitchen Bouquet browning and seasoning sauce. (Gravy Master works well too.)
- Combine the cold water and cornstarch in a small Tupperware with a lid. Shake to combine.
- Bring gravy to a boil. Whisk in cornstarch mixture. Allow gravy to thicken, then decrease to medium-low.
- Let it gently simmer for 2-3 minutes, or until your desired thickness and concentration is obtained.
- Remove from heat. Swirl in one tablespoon cold butter just before serving. This adds a silky, velvety finish.
Notes
- If available, meat drippings can be added to replace part of the broth, enhancing flavor and reducing bouillon need.
- Sautéing onions, shallots, or mushrooms before adding broth adds aromatic depth to the gravy.
- Fresh herbs such as rosemary, sage, or thyme may be added near the end of cooking for subtle herbal notes.
