  • 2 cups brown rice cooked

Instructions

  1. In a medium mixing bowl, whisk the eggs. Add the rice, cheese, and salt and stir to combine well. 
  2. Heat 2 tablespoons olive oil in a large sauté pan over medium heat. Carefully place 1/3 cup of the rice mixture into the hot oil and use a spatula to flatten into a patty. 
  3. Saute until golden brown, about 3-4 minutes on each side.
