Brown Sugar Baked Pork Chops
Description
The recipe starts by seasoning the pork chops thoroughly with a dry rub combining smoky, spicy, and herbal notes. After browning the chops in a skillet to create a golden crust, a rich sauce featuring brown sugar, molasses, and soy-based ingredients is poured over them in a baking dish.
Baking the chops in this sauce infuses the meat with a balance of sweetness, acidity, and savory garlic undertones. The chops finish cooking in the oven until they reach a safe internal temperature, then are rested before serving to keep the juices.
This method enhances the pork chops’ flavor and texture, making them tender with a caramelized, sticky coating. Fresh rosemary can be added for aromatic depth. The chops pair well with simple sides like roasted vegetables or mashed potatoes to complement the sauce.
Ingredients
- 4 pork chops I used bone-in
- 2 tablespoons canola oil
- rosemary optional, fresh
RUB:
- 1 tablespoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon mustard powder
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon rosemary dried
- 1/2 teaspoon Italian seasoning
SAUCE:
- 3 tablespoons soy sauce
- 1 tablespoon Worcestershire sauce
- 1 tablespoon molasses
- 2 tablespoons balsamic vinegar
- 4 cloves garlic minced
- 1/4 cup ketchup
- 1/2 cup brown sugar
Instructions
- Preheat oven to 350 °F.
- Stir the RUB ingredients in a bowl.
- Pat dry the pork chops and rub the RUB mixture into them. Set aside.
- Place a large skillet over medium heat, add the oil, and add the pork chops and brown well on both sides in batches.
- Stir together the SAUCE ingredients in a bowl.
- Place the pork chops on the bottom of a baking pan; I used a 9x13 baking pan. Pour the sauce over the pork chops. Add rosemary if using.
- Bake in the oven for 25-30 minutes or until the pork chops reach an internal temperature of 145 °F.
- Remove, let the meat rest for 10 minutes, and serve.
