Brown Sugar Fig and Gorgonzola Crisp
Description
Brown Sugar Fig and Gorgonzola Crisp combines quartered figs tossed in brown sugar, cinnamon, and salt, layered with crumbled gorgonzola cheese, and topped with an oat-based crisp. The topping, made from old-fashioned oats, brown sugar, flour, cinnamon, and room temperature butter, is hand-crumbled to a crumbly texture then spread over the fruit and cheese before baking. Baking in a 375°F oven until the topping is golden and fruit juices bubble creates a harmonious contrast of soft, sweet-tart figs and sharp, creamy cheese under a crunchy oat topping.
The contrast of the creamy and bold gorgonzola with the naturally sweet and spiced figs is elevated by the buttery crisp topping that adds texture and caramel notes. This crisp can be served immediately after baking, and extra crumbled cheese can be added to intensify the sharpness if preferred.
Ingredients
- 10 figs quartered and chopped into pieces
- 2 tablespoons brown sugar loosely packed
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 4 ounces gorgonzola cheese crumbled + more for topping if you wish
crisp
- 2/3 cups old-fashioned oats
- 2/3 cups brown sugar loosely packed
- 1/4 cup flour
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 4 tablespoons unsalted butter at room temperature
Instructions
- Preheat oven to 375 degrees F. Add figs to a baking dish (I used a 9-inch pie plate) and sprinkling with brown sugar, salt and cinnamon, then toss to coat. Set aside.
- In a large bowl, combine oats, brown sugar, flour, salt and cinnamon, mixing to combine. Add in butter and using your hands, crumble it into the oat mixture, bringing it together until crumbly. I used my hands to toss together and mixed for a good 2-3 minutes, until everything was equally mixed.
- Add crumbled gorgonzola over figs, then add crisp mixture over top. Bake for 30-35 minutes, or until crisp is golden and fruit is bubbly. Serve immediately, with extra gorgonzola if desired.
