Brown Sugar Glaze for Ham

This Brown Sugar Glaze combines brown sugar, honey, pineapple juice, and a blend of spices and mustards to create a sweet and tangy syrupy finish. Simmered until thickened, it enhances the surface of ham with a sticky glaze that develops rich flavor, balancing sweet, tart, and warm spice notes.

Description

The Brown Sugar Glaze for Ham begins by combining light brown sugar, honey (or maple syrup), pineapple juice (or a variation such as orange juice), apple cider vinegar, and two types of mustard—yellow and Dijon. Warm spices including cinnamon, cloves, ginger, black pepper, and garlic powder add depth. The mixture is gently simmered for 7-10 minutes until it reduces to a syrupy consistency that thickens further upon cooling.

This glaze melds the sweetness of sugars and honey with the acidic tang of fruit juice and vinegar, accented by warm spices and pungent mustard flavors. The syrupy texture clings well to the surface of a ham, creating a flavorful crust that caramelizes during baking or broiling.

For optimal flavor development, refrigerate the glaze overnight before use. It stores well in the refrigerator for up to two weeks, allowing for convenient advance preparation. This glaze is applied to ham during the final cooking stages to add a glossy finish and complex sweet-tart-spicy taste.
