Brown Sugar Green Beans with Bacon
Description
This recipe starts by boiling trimmed fresh green beans just until tender to maintain a slight crispness. After cooling, the green beans are combined with a sauce made from cooked chopped bacon, brown sugar, Dijon mustard, and minced garlic. The sauce is simmered briefly until bubbly and thoroughly coats the beans, integrating sweet and tangy elements with savory bacon flavor.
The resulting dish offers tender beans with a sweet brown sugar glaze accented by the sharpness of mustard and the smoky richness of bacon. The garlic adds aromatic depth. The beans maintain a slight firmness, avoiding sogginess, while the sauce clings lightly to each piece.
This side works well alongside roasted or grilled meats, adding a contrast of sweetness and texture to hearty entrees. It is served hot to preserve the glaze and bacon crispness. Variations may substitute turkey bacon for a leaner option.
A tip to elevate this dish is to top with balsamic glaze before serving for an added layer of acidity and sweetness.
Ingredients
- 2 pounds Green bean ends trimmed, fresh
- 4-6 trips Bacon chopped, (may sub turkey bacon)
- ⅔ cup brown sugar
- 2 tablespoons Dijon mustard
- 1 tablespoon garlic minced
- salt to taste
- black pepper to taste
Instructions
- Place beans in a large pot and cover beans with water. Cover pot and bring to a boil over high heat. Boil until beans are tender, but not soggy (they are going to get cooked a bit longer later on so you don't want them overcooked at this point, just to the point they can be easily pierced with a fork).
- Drain pot and rinse beans in cold water. Set aside.
- In skillet, cook bacon over medium-high heat 6-8 minutes until fully cooked but not yet crispy.
- Add brown sugar, dijon mustard, and garlic to the pan and stir until all ingredients are combined. Add green beans and continue to stir until sauce is bubbly and green beans are thoroughly coated in the sauce (4-6 minutes).
- Season with salt and pepper to taste and serve hot.
Notes
- A finishing drizzle of balsamic glaze can enhance the flavor and add a touch of acidity.
