Brown Sugar Roasted Rutabaga
Description
The rutabaga is peeled and cut into one-inch cubes, seasoned with olive oil, dried thyme, salt, and black pepper, then roasted at 425°F for 45 to 55 minutes until tender and browned on the edges. After initial roasting, butter and brown sugar are stirred in to coat the pieces, and the dish is returned to the oven for five more minutes to allow the sugar to caramelize subtly.
This roasting method softens the rutabaga while enhancing its natural sweetness with brown sugar and enriching flavor with butter. The thyme adds a subtle herbal note that complements the sweetness and earthiness of the vegetable.
The finished rutabaga can be served as a warm side dish alongside a variety of main courses. For a less sweet variation, the brown sugar can be omitted, and a short broil at the end can add a crisp finish to the pieces.

Ingredients
- 3 pounds rutabaga
- 1 tablespoon olive oil
- ½ teaspoon thyme dried leaves
- salt to taste
- black pepper to taste
- 2 tablespoons butter
- 2 tablespoons brown sugar
Instructions
- Preheat oven to 425°F.
- Peel rutabaga and cut into 1" cubes. Toss with olive oil, thyme, salt & pepper.
- Spread onto a large roasting pan and roast 45-55 pan or until tender and golden.
- Remove pan from the oven, add butter and brown sugar to the pan, stir until the rutabaga is coated. Return to the oven for 5 minutes.
- Serve warm.
Notes
