Brownie Energy Balls

Brownie Energy Balls combine raw walnuts, cashews, Medjool dates, cacao powder, vanilla, and sea salt into a dense, cocoa-flavored snack dough with chocolate chips dispersed throughout. The mixture is processed until sticky enough to form balls that offer a chewy texture with bursts of chocolate and nutty crunch. These no-bake treats store well chilled or frozen.

Description

This recipe uses a food processor to combine raw walnuts, cashews, pitted Medjool dates, cacao powder, vanilla extract, and sea salt into a cohesive dough. Dates provide natural sweetness and binding, while the nuts supply texture and richness. Dark chocolate chips are folded in at the end for added chocolate flavor and texture contrast.

The dough is shaped by hand into tablespoon-sized balls, which can be eaten immediately or stored chilled in the refrigerator for a week or frozen for up to three months. This makes them convenient energy-packed snacks that require no baking.

If the dates are dry and the mixture too crumbly to hold, soaking dates in warm water before use or adding extra dates or small amounts of water can help achieve the right consistency.

Ingredients

Servings
  • 3/4 cup walnut raw
  • 1/4 cup cashew nuts raw
  • 1 cup date about 10, Medjool, pitted
  • 2 Tablespoons cacao powder or cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt sea salt
  • 1 Tablespoon dark chocolate chips dairy-free if needed

Instructions

  1. Add walnuts, cashews, dates, cacao powder, vanilla, and salt in a food processor fitted with the S-shaped blade. Process until mixture is well combined and sticking together. Add chocolate chips and pulse once more to disperse.
  2. Once mixture is combined, use your hands to form the dough into balls, using about 1 Tablespoon of dough for each ball. Enjoy right away or store for later.
  3. Place balls into a sealed storage container and store in the fridge for 1-2 weeks or the freezer for up to 3 months.

Notes

  • If dates are hard or dry, soak them in warm water for 10-15 minutes to soften before using; drain well.
  • Add extra dates or a small amount of water incrementally if the dough feels too crumbly to hold together.
