Description
Brunswick Stew starts with sautéing garlic and finely chopped yellow onion in butter, developing a flavorful base. Fire roasted tomatoes add a smoky sweetness while chicken stock and barbecue sauce contribute depth and body. Worcestershire sauce, brown sugar, and cayenne pepper balance taste with umami, sweetness, and mild heat. Smoked pulled pork is stirred in alongside frozen corn and lima beans, which provide texture and heartiness.
The stew is brought to a boil, then simmered over medium-low heat for about 1.5 hours, allowing flavors to meld and the stew to thicken. This slow cooking enhances the tender meat and softens the beans and corn.

Ingredients
- 4 Tablespoon butter
- 3 cloves garlic minced
- 1 onion finely chopped, large, yellow
- 1 fire roasted tomatoes undrained, 15 oz can
- 4 cups chicken stock
- 1 1/2 cups barbecue sauce (I used Sweet Baby Ray's)
- 2 Tablespoon Worcestershire sauce
- 1 Tablespoon brown sugar
- 1/4 teaspoon cayenne pepper
- 1 1/2 pounds pulled pork or chicken, smoked
- 8 oz. corn frozen
- 8 oz. lima beans frozen
- salt to taste
- black pepper to taste
Instructions
- Melt butter in a large Dutch oven over medium-high heat. Once melted, add the garlic and onions and saute until soft, about 5 minutes.
- Stir in the tomatoes, chicken stock, barbecue sauce, Worcestershire, brown sugar, cayenne, smoked pork, lima beans, corn and salt and pepper.
- Bring the mixture to a boil, then reduce to a simmer and cook over medium-low heat for 1 1/2 hours, stirring occasionally.
