  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil

For the Bruschetta Topping:

  • 4 Roma tomato diced
  • 2 cloves garlic minced
  • ¼ cup red onion finely chopped
  • 8 basil chopped, leaves
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • Pinch salt
  • Pinch black pepper

Additional Toppings:

  • ¼ cup balsamic vinegar reduced or balsamic glaze
  • basil sliced into ribbons, fresh leaves
  • Parmesan Cheese shaved

Instructions

  1. Place the chicken breasts in a large bowl. Sprinkle the salt, pepper, onion powder, garlic powder, and Italian seasoning over the chicken and add in the olive oil. Toss the chicken in the seasonings and oil until evenly coated. Marinate for at least 15 minutes, or up to 8 hours.
  2. Combine the bruschetta topping ingredients in a separate bowl.
  3. Heat the grill or bring a grill pan to medium-high heat. Then, grill the chicken until it’s cooked through. (Approximately 5-7 minutes per side. The chicken is done when it reaches an internal temperature of 165°F.)
