Bruschetta Tilapia with Balsamic Glaze
Description
This recipe features tilapia fillets baked according to package instructions while a balsamic vinegar reduction simmers on the stove until thick enough to coat a spoon. The tomato bruschetta is prepared by mixing seeded, diced Roma tomatoes with diced red onion, minced garlic, dried and fresh basil, balsamic vinegar, salt, and black pepper. The bruschetta can be chilled ahead to deepen flavors.
Once the fish is cooked, it is topped generously with the fresh bruschetta mixture and finished with a drizzle of the cooled balsamic glaze. The tilapia provides a mild, flaky base that complements the fresh, vibrant topping and the syrupy glaze, creating a balanced dish with contrasting textures and bright flavors.
The dish is suitable as a light lunch or dinner and could be paired with simple sides such as steamed vegetables or a salad. The recipe allows some advance preparation by making the bruschetta early in the day.
Ingredients
- 1 tilapia 2 fillets, with garlic & extra virgin olive oil, package Bumble Bee SuperFresh®
Bruschetta:
- 4 Roma tomato seeds removed and diced
- ⅓ cup red onion diced
- 1½ teaspoons garlic minced
- 1½ teaspoons basil dried
- 2 teaspoons balsamic vinegar
- ½ teaspoon salt
- black pepper fresh, to taste
- 1 Tablespoon basil chopped, fresh
Balsamic Glaze:
- 1/2 - 3/4 cup balsamic vinegar
Instructions
- Preheat oven to 400 degrees.
- Heat Balsamic vinegar over medium heat in a heavy bottomed sauce pan, stirring occasionally. Continue to simmer for 20-30 minutes, or until reduction thickens enough to coat a spoon. Remove from heat and allow to cool.
- While balsamic vinegar cooks, bake tilapia in the preheated oven according to package directions.
- To make the bruschetta, combine all bruschetta ingredients in a medium sized bowl and store in the refrigerator until ready to use. You can even make this in advance earlier in the day and pull it out when you're ready to eat. You will probably have some left over that you can eat eat with mini toasts as an appetizer if you want!
- When fish is cooked, top with bruschetta and drizzle with balsamic glaze. Enjoy!
