  • 1 lb brussel sprout fresh, rinsed and dried
  • 1 Granny Smith apple large
  • ¼ cup dried cranberries
  • ½ cup pomegranate seeds
  • ¼ almonds sliced
  • 1 ½ ounces feta cheese crumbled

Dressing Ingredients

  • ½ cup olive oil
  • 1 Tablespoon lemon juice fresh
  • 2 Tablespoons apple cider vinegar
  • 2 teaspoons mustard
  • 2 Tablespoons honey
  • ½ teaspoon garlic powder

Instructions

Directions for salad:

  1. To prepare the brussel sprouts, use a sharp knife to cut off the ends and discard. Then slice the sprouts as thinly as possible.
  2. Chop or slice the granny smith apple.
  3. Combine all salad ingredients in a large bowl and toss to combine.

Directions for salad dressing:

  1. Combine all ingredients in a small bowl and whisk together until well combined.

Notes

  • Almonds can be substituted for any nuts. The mustard can be yellow or Dijon, whichever you prefer.
