Brussels Sprouts Breakfast Hash

This Brussels Sprouts Breakfast Hash combines crispy bacon, tender sweet potatoes, sautéed red onions, and caramelized Brussels sprouts with eggs cooked to your liking. The savory mixture of textures and flavors creates a satisfying breakfast or brunch option. Cooking the bacon first renders flavorful fat that infuses the vegetables, while serving with buttered toast adds a comforting touch.

Description

Brussels Sprouts Breakfast Hash brings together thick-cut bacon cooked until crisp and aromatic, providing a rich base for the sautéed vegetables. Sweet potatoes are diced and softened along with diced red onion, creating a sweet and savory foundation. Minced garlic deepens the flavor before sliced Brussels sprouts are added, cooking until soft and caramelized. Eggs are poached or fried separately to preferred doneness and served on the hash for creamy contrast. This dish offers a balance of textures with crisp bacon and tender sprouts, perfect for a hearty morning meal.

Finished with salt and fresh black pepper to taste, the hash is complemented well by buttered toast, making the meal more filling. The recipe emphasizes cooking the bacon first to extract flavorful fat, which then cooks the vegetables.

Ingredients

Servings
  • 4 lices Bacon chopped, thick-cut
  • 1/2 red onion diced
  • 1 sweet potato peeled and cut into 1/2-inch cubes
  • 2 garlic minced, cloves
  • 10-12 Brussels sprouts stems removed and sliced
  • 3-4 egg large
  • salt to taste
  • black pepper to taste

Instructions

  1. Heat a large skillet over medium heat and add bacon. Cook until crispy and fat is rendered, then remove with a slotted spoon and let drain on a paper towel. Slightly reduce the heat under the skillet and add onion and sweet potato, tossing to coat. Cook until sweet potato has softened, about 6-8 minutes, then stir in garlic and cook for 30 seconds.
  2. Add sliced brussels sprouts and stir to combine, cooking them until soft and caramely, another 5 minutes or so. In the meantime, poach or fry eggs, cooking until desired doneness. Serve immediately with buttered toast!
