Brussels Sprouts, Kale, and Carrot Slaw

Ingredients

  • 1 pound Brussels sprouts stems removed, and finely chopped, washed well
  • 4 kale leaves remove stem, and finely chop, large, massage with a rolling pin
  • 1 carrot large, peeled and shredded
  • 6 bell pepper mini or large, seeded and shredded
  • ½ cup pumpkin seeds
  • ½ cup Cranberry dried, unsweetened
  • dressing
  • lemon juice from two large
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • 4 stevia or ½ teaspoon of vegan sugar
  • ¾ teaspoon sage dried, ground
  • ¼ teaspoon garlic powder
  • black pepper to taste

Instructions

  1. Combine the vegetables, pepita seeds, and cranberries in a large bowl.
  2. Put the dressing ingredients in a lidded jar or a bowl and shake or whisk until well blended. Pour over the salad and toss well.
