Bubble and Squeak

Bubble and Squeak is a pan-fried dish that combines cooked cabbage, potatoes, and optional leftovers like bacon, ham, and mixed vegetables. The ingredients are mashed lightly and cooked until browned, creating a mixture with a crispy exterior and tender interior. Paprika and seasoning enhance the savory flavors, making it a traditional way to use leftover vegetables and potatoes.

Description

Bubble and Squeak begins by simmering thinly sliced green cabbage until tender. Bacon is cooked separately until crisp, then removed, and onions are softened in the bacon fat to add richness. Cooked potatoes and optional leftover vegetables are mashed gently with the cooked cabbage and ham if used. The mixture is seasoned with salt, pepper, and paprika before being fried in a pan with butter until the outside develops a golden brown crust.

The dish offers a contrast of textures, with tender vegetables inside and a slightly crispy surface. It is a practical way to use cooked potatoes and leftover vegetables from earlier meals. It can be served as a side or topped with poached or fried eggs for a more substantial meal.

Potatoes of any cooked kind — boiled, mashed, or roasted — can be used, and the size of diced potatoes influences cooking time when boiling fresh. The dish adapts well to a variety of leftover vegetables, making it highly versatile in home kitchens.
