Bucatini all Amatriciana Recipe

Bucatini all Amatriciana blends guanciale, spicy Calabrian peppers, and garlic sautéed in olive oil with canned tomatoes and red pepper flakes, creating a flavorful sauce served over al dente bucatini pasta. Garnishes of fresh parsley and grated cheese complete the dish.

Description

This Bucatini all Amatriciana recipe centers on cooking chopped guanciale with onion and Calabrian peppers in olive oil until softened. Adding garlic briefly releases aroma before crushed canned peeled tomatoes join the pan. Simmering with red pepper flakes, salt, and black pepper develops a deeply flavored sauce. The spicy components from Calabrian peppers and chili flakes give the sauce a noticeable kick. This sauce is served over bucatini pasta cooked al dente for a balanced bite that holds the sauce well. Garnishes such as extra crushed red pepper, fresh parsley, and grated Parmesan or pecorino cheese add finishing touches. The recipe allows for substituting guanciale with hot soppressata, pancetta, or bacon if desired.
