Buffalo Cauliflower Bites
Description
Buffalo Cauliflower Bites are made by coating cauliflower florets in a seasoned flour and water batter, then baking them initially to develop a tender but firm texture. After the first bake, the florets are tossed in a buffalo wing sauce blended with melted butter and honey, adding spice and balance with a touch of sweetness. They return to the oven to crisp up and develop slight browning on the edges. This method creates cauliflower pieces that are pleasantly crispy on the outside while remaining tender inside. The sauce mixture ensures the spicy flavor evenly coats each bite.
These bites are commonly served with celery sticks and ranch dip, which provide a cooling contrast to the heat of the buffalo sauce. They work well as a snack, appetizer, or side dish, especially where a vegetarian alternative to buffalo wings is desired.
For best results, cut the cauliflower into similarly sized florets to ensure even cooking. Serve immediately after baking, as the coating softens as it cools. Selecting a preferred brand of buffalo wing sauce affects the final flavor, with Frank's Red Hot being a recommended choice.
Ingredients
- 1 large cauliflower head, stem and core removed and broken into florets
- 1/2 cup flour
- salt to taste
- black pepper to taste
- cooking spray
- 2/3 cup buffalo wing sauce or more to taste
- 1 tablespoon butter melted
- 1/2 teaspoon honey
- celery sticks and for serving
- ranch dip sticks and for serving
Instructions
- Preheat the oven to 450 degrees F. Line a sheet pan with foil and coat with cooking spray.
- In a large bowl, whisk together the flour with 1/2 cup water and salt and pepper to taste. Add the cauliflower florets to the flour mixture and toss to coat.
- Place the cauliflower florets in a single layer on the baking sheet; season to taste with salt and pepper.
- Bake for 20 minutes. While the cauliflower is baking, whisk together the buffalo wing sauce, melted butter and honey until smooth.
- Pour the buffalo sauce mixture over the cauliflower and toss to coat. Bake for an additional 10 minutes or until crispy and just starting to brown.
- Serve immediately, with celery sticks and ranch dip if desired.
Notes
- Cut cauliflower into uniform florets to ensure even cooking.
- Use your preferred buffalo wing sauce variant; Frank's Red Hot is recommended.
- Serve immediately after baking to maintain crispy texture; the coating softens over time.
