Buffalo Cauliflower Recipe
Description
This Buffalo Cauliflower recipe uses cauliflower florets dipped in a seasoned batter made from flour, milk, water, cayenne and basic seasoning. After baking initially, the florets are brushed with buffalo sauce and baked again to intensify the flavor and crispiness. The baking process crisps the exterior while leaving the cauliflower tender inside, allowing the bold, spicy buffalo sauce to cling well. Served with blue cheese dip, the dish mimics traditional buffalo wings in flavor and texture but with a vegetable base. The recipe notes a medium heat level with a desirable zing and encourages using homemade buffalo sauce for preferred flavor. It's a straightforward method to enjoy buffalo flavor as a vegetarian option or appetizer.
Ingredients
- 1 cauliflower florets only (core and stem removed, head
- 1/2 cup flour
- 1/4 cup milk
- 1/4 cup water or more as needed
- 1 tablespoon cayenne pepper (I use 2 tablespoons for extra heat!)
- salt to taste
- black pepper to taste
- 1 cup buffalo sauce favorite
- blue cheese dip for serving
Instructions
- Add flour, milk, water, cayenne pepper and salt and pepper to a mixing bowl. Mix well to form a batter.
- Dip the cauliflower florets into the batter and set them onto a lightly oiled baking sheet.
- Bake at 450 degrees for 20 minutes.
- Remove and brush generously with Buffalo sauce.
- Bake 10 more minutes.

Notes
- The heat can be adjusted by varying the cayenne pepper amount in the batter.
- Pair with blue cheese dip to balance the spiciness and enhance the buffalo flavor experience.
- Using homemade buffalo sauce allows control over spice level and flavor profile.
