Buffalo Chicken Blooming Quesadilla
Description
This recipe starts by mixing shredded chicken with cream cheese, ranch or blue cheese dressing, garlic powder, buffalo sauce, and green onions to create a creamy, flavorful filling. Flour tortillas are halved and filled with the mixture, rolled into cones carefully to hold shape without leaking filling. These cones are arranged in circles around a bowl on a baking sheet to create a blooming flower shape. Shredded cheddar and mozzarella cheese are sprinkled between layers and on top for a golden, melted finish.
Baked until bubbly, the quesadilla has crisp edges and soft centers with layers of spicy buffalo chicken and creamy cheeses throughout. It makes a shareable, festive appetizer or party dish served with ranch or blue cheese dressing for dipping.
Ingredients
Quesadilla Ring
- 12 flour tortillas (medium sized (10" - 12"))
- ¼ cup cheddar cheese (shredded)
- ¼ cup mozzarella cheese (shredded)

Buffalo Chicken Filling
- 4 cups chicken shredded, rotisserie chicken or homemade, cooked
- 8 ounces cream cheese (at room temperature, 1 brick, 250 grams)
- ¼ cup ranch dressing (or blue cheese dressing)
- ¼ teaspoon garlic powder
- 2 green onions (thinly sliced)
- ¼ cup buffalo sauce (½ cup for extra spicy recipe)
- ¼ cup cheddar cheese (shredded)
- ¼ cup mozzarella cheese (shredded)
Garnish
- ½ cup green onion (thinly sliced)
For Serving
- blue cheese dressing (for dipping)
- ranch dressing (for dipping)
Instructions
- Preheat oven to 375˚F. Line a baking sheet or pizza tray with parchment paper or greased foil.
- In a large bowl stir together all of the buffalo chicken filling ingredients. Mix until evenly combined.
- Slice the tortillas in half.
- Evenly distribute the buffalo chicken filling on the sliced tortillas. Evenly spread the filling out, leave a small border around the edges of the tortillas.
- Roll the tortillas into cones. Roll them tightly enough so that the filling holds the cone together but do not press them too tightly so that the filling oozes out.
- Place a small round bowl in the center of the baking sheet.
- Arrange the cones around the bowl with the points of the cones touching the bowl. Create one layer of quesadilla cones for the base.
- Sprinkle half of the shredded cheddar and mozzarella cheese on top of the base layer of cones.
- Place the remaining quesadilla cones on top to create the second layer. Top with the remaining shredded cheddar and mozzarella cheese. Remove the bowl.
- Spray the edges of the tortillas with cooking spray, or brush with oil.
- Bake the quesadilla ring until the cheese is melted, and the edges of the tortillas are crispy, approximately 15-20 minutes.
- Carefully transfer the blooming quesadilla to a serving platter. Garnish with thinly sliced green onions.
- Fill a small bowl with ranch or blue cheese dressing and place in the centre of the ring. Serve and enjoy!
