Buffalo Chicken Casserole

This Buffalo Chicken Casserole combines shredded cooked chicken with cauliflower rice, cream cheese, blue cheese dressing, and buffalo wing sauce. Baked until golden with cheddar cheese on top, it has a creamy texture with spicy, tangy buffalo flavor. The casserole is finished with celery and blue cheese crumbles for freshness and added texture, making it a hearty comfort dish.

Description

The casserole mixes cooked shredded chicken and riced cauliflower with a creamy blend of cream cheese, blue cheese dressing, eggs, and buffalo wing sauce. Seasoned with salt and enhanced by finely sliced celery and scallions, this mixture is baked until set and topped with shredded cheddar cheese that melts and browns slightly. The baking process melds the flavors and creates a rich, creamy casserole with a slight bite from the buffalo sauce.

The blue cheese elements provide a sharp, tangy counterpoint to the spicy buffalo wing sauce, while the cauliflower rice lends structure and reduces heaviness compared to traditional casseroles. Adding sliced celery on top gives a crisp texture contrast and freshness. The dish is suitable as a main for dinner, delivering protein with flavorful heat and creamy textures.

Leftovers can be stored in the refrigerator or frozen, making this a practical meal to prepare ahead. The dish can be garnished with additional buffalo sauce and celery for serving.
