Buffalo Chicken Casserole Recipe

Buffalo Chicken Casserole mixes bite-size chicken pieces with long grain rice, sautéed onions and celery, and a tangy hot sauce. It's cooked until the rice absorbs the broth and becomes fluffy, then topped with cheddar and blue cheese for a creamy, rich finish. Chopped green onions add freshness. The casserole balances mild heat and cheese for a filling, comforting dish.

Description

The Buffalo Chicken Casserole starts by sautéing onion and celery in butter to soften them, releasing their mellow sweetness. Bite-sized chicken is combined with rice, hot sauce, and chicken broth, then simmered covered until the liquid is fully absorbed and the rice is cooked tender. This method results in a moist, flavorful base combining spicy buffalo notes with tender chicken and vegetables.

Cheddar and crumbled blue cheese folded in at the end melt into the rice, adding creamy tang and sharpness that complements the heat of the hot sauce. Chopped green onions sprinkled on top bring a bright, mild onion flavor and hint of crunch. This casserole is hearty enough for an entrée and pairs well with green salads or steamed vegetables.

Ingredients

Servings
  • 1 1/2 pound chicken breast cut into bite-size pieces, boneless
  • 2 tablespoons butter
  • 1 cup onion chopped
  • 1 cup celery chopped
  • 1 1/2 cups long grain rice
  • 1/2 cup hot sauce brand Frank's RedHot
  • 2 1/2 cups water or chicken broth
  • 1 cup cheddar cheese shredded
  • 1/2 cup blue cheese crumbled
  • 1/4 cup green onion chopped

Instructions

  1. Cut the chicken into 1-inch bite-size pieces. Chop all the vegetables.
  2. Place the butter in a large skillet or sauté pan, with a lid. Set over medium heat. Add the chopped onions and celery. Sauté for 3-5 minutes to soften.
  3. Add the chicken pieces, rice, hot sauce, broth, and 1/4 teaspoon salt. Stir, then cover the skillet. Bring to a boil. Lower the heat and simmer for 15 minutes, or until the broth has absorbed and there are air vent holes in the top of the rice.
  4. Fluff the rice with a fork. Stir in the cheddar, blue cheese, and green onions. Taste, then salt and pepper as needed.
