Buffalo Chicken Celery Sticks
Description
Buffalo Chicken Celery Sticks combine shredded cooked chicken coated in a warm buffalo sauce crafted from hot sauce, melted butter, honey, garlic, salt, and softened cream cheese. The resulting rich and tangy sauce clings to the chicken, which is spooned into crisp celery stalk pieces cut into manageable lengths. The contrast between the creamy, spicy filling and the refreshing crunch of celery creates a balanced flavor and texture.
The sauce's acidity from hot sauce and sweetness from honey complement the savory notes of garlic and cream cheese, producing a mildly spicy, creamy filling. The celery's freshness offsets the richness, making the dish a finger food that works well as an appetizer or snack. Optional garnishes such as chopped green onions and ranch dressing add color and mild cooling elements.
These celery sticks can be served immediately while warm or chilled. If serving cold, it's advisable to assemble them shortly before eating to prevent sogginess. They accommodate preferences for mild or spicier heat depending on the hot sauce used. Storing the filling separately from celery prolongs freshness and texture. These make a portion-controlled, flavorful snack or party starter.
Prepare the sauce by cooking ingredients until boiling, then whisk in cream cheese until blended. Toss the chicken in the sauce to coat evenly. For assembly, spoon 1-2 tablespoons of the chicken filling into each celery piece. Top with optional green onions or ranch as desired.
Ingredients
- ½ cup hot sauce such as Frank's
- 6 Tbsp. butter
- 1 Tbsp. honey or sugar
- 1 clove garlic finely minced
- ¼ tsp. salt to taste
- 4 Tbsp. cream cheese cut into 4-6 pieces
- 4 cups chicken cooked, shredded
- 1 celery bunch, cut into 2-3 inch pieces
- ranch dressing optional
- green onions optional
Instructions
- Make the Sauce: In a medium-sized saucepan over medium heat combine hot sauce, butter, honey, garlic and salt. Bring ingredients to a boil while whisking constantly. Once sauce is boiling, turn off the heat and add cream cheese. Whisk until combined. (It’s ok if some small clumps remain.)
- Sauce the Chicken: Pour sauce over shredded chicken in a large bowl and toss until chicken is coated.
- Fill and Serve: Fill each celery stick with 1-2 tablespoons of buffalo chicken. Top sticks with green onions and drizzle each with ranch dressing or serve on the side for dipping. Serve them immediately, while the chicken is still warm, or serve them chilled. If serving these chilled, wait until 1-2 hours before serving to assemble so the celery does not get soggy.
Notes
- Store buffalo chicken filling and celery sticks separately in airtight containers for up to 3-4 days.
- Cut celery sticks to uniform size for easier filling and presentation.
- This appetizer can be served warm or cold; assemble shortly before serving if chilled to avoid soggy celery.
- Homemade or store-bought hot sauce both work for the buffalo sauce base.
- Optional toppings include chopped green onions and ranch dressing served on the side or drizzled on top.
