Instructions

  1. Heat the olive oil in a large soup pot or dutch oven over medium heat. Add the carrots and celery and cook, stirring often, until they start to soften.
  2. Add the ground chicken. Cook, breaking up with a wooden spoon as it cooks. Continue to cook until no longer pink.
  3. Stir in the ranch seasoning, onion powder, garlic powder, salt, and pepper. Cook for 1-2 minutes.
  4. Add in the chicken broth, beans, tomatoes, and buffalo sauce. Continue to cook until it comes to a simmer.
  5. Once at a simmer, add in the cream cheese. Continue cooking, stirring often, until the cream cheese has melted into the chili.
  6. Serve warm, topped with cilantro and blue cheese crumbles.

Notes

  • I have made this with both 1 and 2 cans of beans, and love it both ways! 2 cans will give you more fiber.
  • 2 cans will give you more fiber.
  • Use less buffalo sauce if you want to make it more mild.
  • If you aren’t a fan of blue cheese, you can also use shredded cheddar cheese to top your chili.
  • Nutrition information provided as an estimate only. Various brands and products can change the counts. Any nutritional information should be used as a general guide. Nutrition information does not include cilantro or blue cheese toppings.
