  • 2 cups chicken shredded

  • 1/2 cup buffalo sauce
  • 1/2 cup ranch dressing
  • 1 cup Colby jack cheese

Garnish:

  • green onions optional, sliced green onions
  • cilantro
  • blue cheese

Instructions

  1. Preheat oven to 350 degrees. Shred rotisserie chicken or poached chicken and place in a bowl. Stir together softened cream cheese, buffalo sauce, and ranch dressing.
  2. Pour into a 1-quart baking dish (8 x 6). Spread to the edges. Sprinkle with grated cheese. Bake for about 20 minutes or until warm and bubbly.
  3. Sprinkle with your favorite garnishes -- green onions, cilantro, or blue cheese -- or all 3 of them!
  4. Serve with your favorite dippers -- crusty pieces of bread, tortilla chips, Siete grain-free chips, pita chips, crackers, pita bread triangles, or fresh vegetables such as sliced cucumber, carrot sticks, and celery sticks.
