Description

The Buffalo Chicken Dip uses softened cream cheese whipped together with blue cheese dressing, buffalo sauce, sour cream, parsley, and garlic salt to form a flavorful base. Into this, cooked shredded chicken and shredded cheddar cheese are stirred, reserving a portion of cheddar for the topping. The mixture goes into a lightly oiled baking dish, topped with cheddar, and baked until the cheese melts and browns slightly. A final sprinkle of blue cheese crumbles and optional chives finish the dish.

The dip balances creamy textures from the cheeses and sour cream with spicy heat from the buffalo wing sauce. The blue cheese dressing provides tang and depth. Ingredients

  • 2 cups chicken cooked and finely shredded
  • 1 ¾ cups cheddar cheese shredded
  • 8 ounces cream cheese softened
  • ½ cup blue cheese dressing
  • ½ cup buffalo wing sauce
  • ½ cup sour cream
  • ¼ cup blue cheese crumbles
  • 2 teaspoons parsley dried
  • 1 teaspoon garlic salt
  • Optional chive chopped, fresh

Instructions

  1. Preheat oven to 375F.  Add the cream cheese to a mixing bowl and whip up using a hand mixer.
  2. Add in the blue cheese dressing, buffalo sauce, sour cream, parsley and garlic salt. Mix until well combined.
  3. Add in the shredded chicken and cheddar cheese, reserving about ¾ cup of the cheddar cheese for the topping.  Mix by hand until combined.  
  4. Pour the mixture into an 8x8 (or slightly smaller) casserole baking dish that's been sprayed or brushed with olive oil.
  5. Sprinkle the reserved cheddar cheese over the top and bake for 20 minutes , or until the cheese is slightly golden brown. Bake an additional 5 minutes at 400°F.  Allow to cool slightly and top with the blue cheese and (optional) chopped chives, before serving.

Notes
