Buffalo Chicken Enchiladas

These buffalo chicken enchiladas are filled with flavorful filling and topped off with a creamy buffalo ranch sauce

Ingredients

Servings
  • 3 cups chicken shredded, cooked
  • ½ cup buffalo sauce
  • ¼ cup sour cream
  • 10 flour tortillas or corn tortillas, soft
  • 2 tablespoons butter unsalted
  • 2 tablespoons all-purpose flour
  • 1 package Ranch dressing mix dried
  • 1 cup chicken broth
  • 1 cup half-and-half
  • 8 ounces Monterey jack cheese shredded
  • buffalo sauce Ranch dressing, and sliced scallions for garnish, more

Instructions

  1. Pull out and measure the ingredients.
  2. Preheat the oven to 350°F. Spray a 9x13 baking dish with cooking spray. Set aside.
  3. In a medium bowl, mix the chicken with the Buffalo sauce and sour cream.
  4. Stir until blended.
  5. Place about ¼th cup of the chicken mixture on the bottom of ⅓rd of a tortilla.
  6. Roll the tortilla around the filling and place it seam-side down into the baking dish. Repeat with the remaining filling and tortillas.
  7. In a small saucepot or skillet, melt the butter over medium-low heat. Whisk in the flour and Ranch seasoning mix. Let cook for 2 minutes, whisking occasionally.
  8. Slowly stream in the chicken stock while stirring.
  9. Slowly stream in the half and half while stirring.
  10. Let simmer for 2 minutes or until thickened.
  11. Pour the sauce over the Enchiladas in the baking dish.
  12. Top with the shredded Monterey Jack cheese.
  13. Cover with foil. Make sure foil does not to touch the cheese. Bake for 25-30 minutes until the cheese is melted and bubbly.
  14. Optional: Take the foil off and turn the broiler on high. Broil until the cheese is a light golden color. Keep a close watch on it so it doesn't burn, as it only takes a a couple of minutes.
  15. Let cool for at least 5 minutes.
  16. Top with more Buffalo sauce, Ranch dressing and sliced scallions, if desired.
  17. Serve!

Notes

  • The sauce on top doesn’t taste much like ranch but the ranch seasoning just gives it a nice flavor, but it doesn’t scream RANCH.
  •  
  • An ultimate taste sensation is what these enchiladas are and they deserve to have something equally tasty to be served with them. Take a gander at that list and I'm sure you'll find something that will send your friends and family to the moon and back...they're just that good!
  • Such a fun twist on a classic. The buffalo sauce really shines through, it is not overly spicy but there is a definite kick. I suggest halving the buffalo sauce in the filling if you do not like spice.
  • The sauce on top doesn’t taste much like ranch but the ranch seasoning just gives it a nice flavor, but it doesn’t scream RANCH.
