Buffalo Chicken Lettuce Wraps
Description
The Buffalo Chicken Lettuce Wraps recipe uses shredded cooked chicken breast tossed in a homemade buffalo sauce comprising hot pepper sauce, melted unsalted butter, garlic powder, and smoked paprika. This sauce creates a spicy, tangy coating with depth from smoked paprika and mellow richness from butter. The dressed chicken is placed on cleaned and dried Boston lettuce leaves, chosen for their pliability and size, making them effective as handheld wraps. Blue cheese dressing drizzled on top balances the heat with creamy, tangy notes. The wraps can be served cold or briefly microwaved to warm the chicken. Variations include adding vegetables like celery or carrots for crunch or using shredded skinless chicken thighs as a substitute. The chicken mixture keeps well in the fridge for up to four days separately before assembling.
Ingredients
Buffalo sauce:
- ⅓ cup hot pepper sauce
- 2 tablespoons butter melted, unsalted
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
Wraps:
- 2 cups chicken breast shredded; 10 ounces, from 2 medium chicken breasts, cooked
- 8 Boston lettuce leaves washed and well-dried
Topping:
- blue cheese dressing homemade or store-bought
Instructions
- Mix the buffalo sauce ingredients (hot pepper sauce, melted butter, garlic powder, and smoked paprika) in a large bowl.
- Add the shredded chicken in batches and mix thoroughly, until well-coated. If desired, cover and heat the chicken in the microwave until heated through, for 1-2 minutes. I usually serve these wraps cold.
- Place two lettuce leaves on each plate. Pile ¼ cup of the chicken mixture on top of each leave. Drizzle with the blue cheese dressing. Serve immediately, or refrigerate for up to two hours before serving.
Notes
- Nutrition info excludes blue cheese dressing, which can be homemade or store-bought.
- Cook chicken breasts by baking at 450°F after lightly oiling and seasoning until cooked through, then shred.
- Shredded skinless chicken thighs can replace breasts if preferred.
- Optional additions include diced celery, shredded carrots, chopped cilantro, or sliced green onions for extra texture and flavor.
- Boston or Bibb lettuce leaves are preferred for their soft, round shape; Romaine leaves can be used but are narrower and less flexible.
- Using rotisserie chicken (skin removed) is a convenient shortcut.
- The chicken mixture can be prepared ahead and stored in an airtight container in the fridge for up to 4 days.
