Buffalo Chicken Meatball Recipe
Description
Ground chicken is blended with beaten egg, bread crumbs, dried minced onion, salt, black pepper, and cayenne pepper to create a flavorful mixture. Portioning into two-inch meatballs helps keep a uniform size and consistent cooking. Baking at 350°F ensures gentle cooking and reduces sticking by using a sprayed baking dish.
After baking, the meatballs are simmered in buffalo wing sauce combined with blue cheese dressing in a saucepan to meld flavors and coat the meatballs. Crumbled blue cheese is sprinkled over before serving to add creamy tang and texture contrast.
This method produces moist meatballs with a spicy coating, suitable as an appetizer or game-day dish.
Ingredients
- 1 pound ground chicken , hand torn into small pieces
- 1 egg , beaten
- 3/4 cup bread crumbs or plain with 1 teaspoon Italian seasoning, Italian style
- 1/2 teaspoon kosher salt coarse
- 1 tablespoon onion minced dried
- 1/2 teaspoon black pepper ground
- 1/8 teaspoon cayenne pepper
- 1 cup buffalo wing sauce
- 2 tablespoons blue cheese dressing , plus more for dipping
- 2 tablespoons blue cheese , crumbled
- cooking spray
Instructions
- Preheat the oven to 350°F and coat a 9x13 baking dish with cooking spray. Ground chicken doesn't have a lot of fat, so you run the risk of sticking.
- In a large mixing bowl combine the ground chicken, egg, bread crumbs, dried onion flakes, salt, pepper and cayenne. With very clean heads or wearing non-powder latex gloves, mix thoroughly.
- Form the meat mixture into 2-inch meatballs with your hands. Because the amounts of water added to ground chicken vary you may need to add extra breadcrumbs to help bind.
- Bake the meatballs for 20 minutes, or until outsides are fully cooked and inside registrars at 165°F.
- Meanwhile, combine the buffalo wing sauce and 2 tablespoons of blue cheese dressing in a medium saucepan over low heat.
- Add the meatballs to sauce and simmer for an additional 10-20 minutes. Sprinkle with crumbled blue cheese and serve hot!
