Description
Buffalo Chicken Meatballs are made from ground chicken blended with panko crumbs, egg, scallions, celery, carrot, and garlic, seasoned and shaped into small meatballs. Baking them at 400°F yields a golden exterior while ensuring they remain juicy inside. After baking, the meatballs are combined with hot sauce to coat them evenly, infusing a characteristic buffalo flavor throughout.
The final texture is tender with a slight crisp on the outside. The use of finely minced vegetables adds subtle moisture and bite without overpowering the chicken. Blue cheese dressing can be drizzled on top or served alongside, adding creaminess and cooling contrast to the spicy sauce.

Ingredients
- cooking spray I used my mister
- 1 1/4 lb ground chicken
- 1/4 cup panko crumbs
- 1 egg large
- 2 scallions (chopped)
- 1/3 cup celery finely minced
- 1/3 cup carrot finely minced
- 1 clove garlic crushed
- salt to taste, Kosher salt and freshly ground
- black pepper to taste, Kosher salt and freshly ground
- 1/3 cup hot sauce brand: Franks
- 1/4 cup blue cheese dressing optional, skinny
- celery leaf optional, finely chopped, for garnish
Instructions
- Preheat the oven to 400°F.
- Lightly spray a non-stick baking sheet with oil.
- In a large bowl, combine the ground chicken, panko crumbs, egg, scallions, celery, carrot and garlic; season with salt and pepper, to taste.
- Using clean hands, mix until combined. Roll the mixture (1/8 cup each) into 26 round meatballs.
- Place meatballs onto prepared baking sheet and bake until cooked through and golden, about 16 to 18 minutes.
- Place the meatballs in a bowl, add the buffalo sauce and gently toss to combine.
- Serve immediately, drizzled with blue cheese dressing, if desired.
