- 2 tablespoons tomato , chopped
- 2 tablespoons avocado , diced
- 1 lime , cut into wedges
Instructions
- Toss the shredded chicken in the buffalo sauce.
- In a large cast iron skillet (or other oven-safe skillet), spread out the blue corn tortilla chips. Top with the shredded Colby cheese. Place the skillet 3-4 inches from the heating element on high broil.
- Allow the cheese to melt, approximately 1-2 minutes. Watch carefully!
- Remove and top with the chicken. Turn off the oven, but return the skillet to oven and close door for 3-4 minutes to let the chicken warm.
