Buffalo Chicken Pinwheels
Description
Buffalo Chicken Pinwheels bring together the sharpness of blue cheese and the creaminess of whipped cream cheese, spread evenly inside burrito-sized flour tortillas. The shredded cooked chicken is coated in Buffalo-style hot sauce, adding a spicy tang that contrasts with the cooling cheese mixture. Once rolled up tightly and refrigerated for at least an hour, the tortillas firm up to allow clean slicing into one-inch pinwheel pieces. These pinwheels have a soft texture from the tortilla and creamy interior with bold, spicy, and savory flavors from the Buffalo chicken and cheeses.
This recipe works well as a party appetizer, finger food, or snack. The pinwheels can be served chilled or slightly chilled, making them convenient for make-ahead entertaining. The rolled and sliced shape also makes portion control simple. The combination of bright Buffalo sauce and creamy cheeses offers a layered flavor profile that balances heat and richness.
Making the pinwheels a day in advance allows the flavors to meld and improves the texture, as noted in the recipe notes. The ends trimmed from the tortillas can be saved as a snack to avoid waste. The recipe uses simple ingredients and straightforward steps focused on mixing, rolling, chilling, and slicing.

- 8 ounces cream cheese room temperature, whipped
- 3 cups chicken shredded, cooked
