Buffalo Chicken Pizza
Description
This recipe starts by marinating shredded chicken in buffalo sauce and some blue cheese dressing, infusing heat and tang. The pizza dough is prepared on a pan or stone with a layer of pizza sauce followed by a generous spreading of shredded mozzarella. The buffalo chicken, thinly sliced red onions, and banana peppers add texture and bright, sharp flavors. Additional mozzarella is sprinkled on top to bind the toppings as it melts during baking.
After baking for about 13 minutes in a preheated 450°F oven, the crust is brushed with a mix of melted butter, Parmesan, and garlic powder to enhance crispness and add a savory garlic note. The pizza returns to the oven briefly to brown the crust further. It is garnished with chives, red pepper flakes, and parsley to add fresh herbal accents and mild heat on serving.
This pizza offers layers of spicy buffalo flavor with creamy blue cheese and mozzarella richness, balanced by the fresh toppings and crunchy crust. It suits casual meals and pairs well with cold beverages or light sides.
Pro tips include using low moisture shredded mozzarella for better melting, substituting ranch for blue cheese dressing if preferred, and trying store-bought dough for convenience. Storage and reheating details are available to help preserve leftovers without sacrificing quality.
Ingredients
- 1 ½ cups chicken shredded
- 1/3 cup buffalo sauce plus more to drizzle on top
- ¼ cup blue cheese dressing divided. Can sub Ranch.
- 1 lb. pizza dough at room temp
- 1/2 cup pizza sauce
- 1 ½ cups mozzarella cheese
- ¼ cup red onions thinly sliced
- ¼ cup banana pepper patted dry, rings
Garlic Butter Parmesan Crust
- 1 tablespoon butter melted
- 1 teaspoon Parmesan Cheese grated
- ¼ teaspoon garlic powder
To Garnish
- chives or green onions
- red pepper flakes
- parsley
Instructions
- Preheat oven to 450° F. Note: If you have a pizza stone, put it in the oven while it preheats for more even cooking and a browner, crisper crust.
- Combine the shredded chicken, buffalo sauce, and 1 tablespoon of blue cheese. Let the chicken marinate while you prepare the remaining ingredients.
- Spread the dough onto a lightly greased, 12-inch pizza pan (or stone). Poke holes in it with a fork to prevent the crust from bubbling up in the oven.
- Top with pizza sauce, then with most of the mozzarella. Add the chicken, onions, and banana peppers, then the remaining mozzarella.
- Drizzle with 3 tablespoons of blue cheese, along with 1-2 tablespoons of buffalo sauce.
- Bake for 13 minutes and remove from the oven.
- Combine the melted butter, Parmesan cheese, and garlic powder. Brush it over the crust of the pizza and return it to the oven.
- Bake for 2-3 more minutes, or until the crust begins to brown.
- Garnish with green onions, red pepper flakes, and parsley. Slice and serve!
Notes
- Nutrition facts are estimated per slice; recipe yields 8 slices.
- Use a chunkier blue cheese dressing from the refrigerated produce area for optimal flavor; ranch dressing can be substituted.
- Choose low-moisture whole milk shredded mozzarella for melting; avoid fresh mozzarella as it is too wet for this pizza.
- Store-bought refrigerated pizza dough can be used for convenience, or homemade dough for a fresher crust.
