  • 2 chicken breast cut into 1 inch cubes, boneless, skinless
  • salt to taste
  • black pepper to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1/2 cup hot sauce
  • 1 tbsp salad seasoning mix McCormick Salad Supreme Seasoning
  • 2 heads romaine lettuce cut into small pieces
  • 1 tbsp blue cheese plus 1 tbsp for garnish, crumbled
  • croutons

Bleu Cheese Ranch Dressing

  • 1/2 cup mayonnaise
  • 1/2 cup milk
  • 1 1/2 tbsp ranch salad dressing mix
  • 1/8 cup bleu cheese crumbled

Instructions

  1. Make dressing by mixing mayo, milk, and ranch mix. Stir in bleu cheese and refrigerate for 30 minutes.
  2. Add vegetable oil to a large skillet and cook on MED-HIGH heat. Add the chicken cubes and cook until slightly browned and cooked through.
  3. Reduce heat to low and add butter, hot. sauce and salad seasoning mix. Cook for about 5 minutes, stirring occasionally. Remove chicken keeping any of the hot sauce needed to toss in with the salad.
  4. Toss together the lettuce and bleu cheese ranch dressing. Top with the chicken pieces, croutons and bleu cheese crumbles. Serve immediately.
